Dextranase

Dextranase is a concentrated enzyme preparation for use in cane & beet sugar processing. It consists of dextranase as the primary enzyme component. Dextranase randomly hydrolyzes the interior alpha-1-6-glucosidic linkages of Dextran as well as 1-2 and 1-3 bonds.

  • Sugar Industry: At a cane sugar refinery, dextran-containing juice shows a low filtration rate and poor crystallization of sucrose. Dextranase is an endo-splitting type of dextranase and hydrolyzes the dextran rapidly.
