Dextranase is a hydrolysed Dextran which is a microbial biopolymer whose molecular structure is composed exclusively of monomeric 2-D-glucopyranosil units, linked mainly by (a – 1,6) glycosidic bonds. Applications of dextran depend on its molecular weight.
