Bromelain is chief protease enzymes found in a pineapple plant it is a concoction of sulfhydryl proteolytic enzyme. Bromeain is abundant in stem and fruit of pineapple plant and it can also be isolated in small amount from pineapple waste such as core, leaves & peels .bromelain present in fruits of pineapple regarded as fruit bromelain (FBM). Likewise bromelain present in the stem of pineapple is called stem bromelain (SBM). Bromelain, also called a ‘pineapple extract’ is a combination of several compounds, including a large amount of s special proteindigesting enzyme. Bromelain remain enzymatic active over a broad spectrum and endure a range of pH (5.5 to 8.0) and temperature (35.5 to 71° C). it is one of the extensively proteolytic enzyme owing to its astonishing applications in various industries.

Animal feed

Bromelain is used for the estimation of protein degradation in the feed of the ruminant. In weanling pigs, 0.2% of bromelain was used as a dietary supplement, improving the grown rate of the pigs, with reduce E-coli contamination and NH3 gas in the feces.
