Bromelain is chief protease enzymes found in a pineapple plant it
is a concoction of sulfhydryl proteolytic enzyme. Bromeain is
abundant in stem and fruit of pineapple plant and it can also be
isolated in small amount from pineapple waste such as core,
leaves & peels .bromelain present in fruits of pineapple regarded
as fruit bromelain (FBM). Likewise bromelain present in the stem
of pineapple is called stem bromelain (SBM). Bromelain, also
called a ‘pineapple extract’ is a combination of several
compounds, including a large amount of s special proteindigesting enzyme. Bromelain remain enzymatic active over a
broad spectrum and endure a range of pH (5.5 to 8.0) and
temperature (35.5 to 71° C). it is one of the extensively proteolytic
enzyme owing to its astonishing applications in various
industries.

Industrial application of bromelain enzyme
Meat industries

- Increase water holding capacity & protein content
- Enhanced hydrolysis of myofibrillar meat protein.
- Increasing the duration makes the meat more susceptible to the catalysis by bromelain leading to the meat producing juice and become more palatable.
Bakery industries
Gluten is a functional component of wheat food products such as
flour. It consists of two major proteins, Gliadin and glutenin.
Glutenin becomes insoluble and forms lattice like structures when
it is hydrated. Therefore, gluten must be degraded to avoid
resistance to stretching.

Bromelain can be used to treat acne and wrinkles, and to reduce

Fish protein hydrolysis
Bromelain enzyme produces fish hydrolysate by hydrolyzing the
proteins in fish. The hydrolysate is widely used as a nutritional
supplement and an important ingredient in some pharmaceuticals
industries.

Anti-browning agent

Bromelain is used in preventing undesirable changes due to phenol
oxidation that affects the flavor and the nutritional quality of fruits.
Phenolic oxidation produces a brown color pigments and primarily
responsible for causing undesirable changes.
Animal feed
Bromelain is used for the estimation of protein degradation in the
feed of the ruminant. In weanling pigs, 0.2% of bromelain was used
as a dietary supplement, improving the grown rate of the pigs, with
reduce E-coli contamination and NH3 gas in the feces.

Tooth whitening

Bromelain helps in removing satins, plaques, and food debris from
the teeth. Certain food and beverages impart extrinsic coloration to
the teeth. The dentifrice bromelain, by its proteolytic activity,
degrades the accumulated protein on the tooth and gives higher
lightening.
