Dextranase

Dextranase is an enzyme preparation from the glucosyltransferase family, obtained from a selected strain of microorganisms. It is an endo-type enzyme that specifically hydrolyzes the α-1,6 glycosidic linkages in dextran.

This action helps reduce the viscosity of sugar juice quickly and prevents sucrose crystal elongation, making it highly valuable in sugar manufacturing.
