Glucoamylase is produced from a selected strain of Aspergillus niger. It catalyzes the hydrolysis of polysaccharides by breaking α-1,4 and α-1,6 glycosidic bonds consecutively from the non-reducing ends of starch chains, ultimately releasing glucose units. This makes it a highly effective enzyme for complete starch conversion.
Applications of Glucoamylase
> Glucose Syrup Production – Efficiently converts liquefied starch into glucose.
> High-Fructose Corn Syrup (HFCS) Production – Prepares glucose-rich substrates for subsequent isomerization to fructose.
> Whole Grain and Starch Hydrolysis – Assists in breaking down complex carbohydrates in cereals and grains.
> Food Processing – Used in various food formulations for sweetness enhancement and texture improvement.
